# How to Make It:

01 - Preheat oven to 375°F. Toss bread cubes with 2 tablespoons olive oil, garlic powder, and salt. Spread on a baking sheet and bake for 10-12 minutes until golden and crisp. Set aside.
02 - In a large pot, heat 2 tablespoons olive oil over medium heat. Add diced onion, celery, and carrots; sauté for 5 minutes until softened.
03 - Add minced garlic, dried thyme, and dried oregano to the pot; cook for 1 minute until fragrant.

08 - Ladle soup into bowls and top with croutons, fresh parsley, and cheese if desired. Serve hot.

# Expert Hints:

01 -
  • The immersion blender creates a silky smooth texture while maintaining that homemade rustic quality you just cant get from canned soups.
  • Its secretly adaptable to whatever vegetables are looking sad in your refrigerator though the cauliflower broccoli combination creates the perfect balance of earthiness and sweetness.
02 -
  • Dont rush the initial vegetable sauté the caramelization that happens during these first few minutes creates depth of flavor that cant be added later.
  • If using a stand blender instead of immersion, fill it only halfway with hot soup, remove the center cap from the lid, and cover with a kitchen towel to prevent hot soup explosions.
03 -
  • If your soup seems too thick after blending, add hot broth or water a quarter cup at a time until you reach your desired consistency its much easier to thin than to thicken.
  • Reserve a few small florets of blanched broccoli before blending and add them back to the finished soup for textural interest and a visual reminder of whats in the bowl.
