Crispy Feta Fried Eggs (Printable)

Eggs fried over golden crispy feta for a savory Mediterranean breakfast. Creamy centers with crunchy edges, ready in 12 minutes.

# What You'll Need:

→ Dairy

01 - 3.5 ounces feta cheese, crumbled

→ Eggs

02 - 2 large eggs

→ Oils & Fats

03 - 1.5 tablespoons olive oil

→ Seasonings

04 - 0.25 teaspoon freshly ground black pepper
05 - 0.25 teaspoon red pepper flakes

→ To Serve

06 - 2 slices crusty bread, toasted
07 - Fresh herbs (parsley, dill, or chives), chopped

# How to Make It:

01 - Pour olive oil into a nonstick skillet set over medium heat. Allow the oil to shimmer and reach the proper temperature before proceeding.
02 - Distribute crumbled feta cheese evenly into two small mounds in the pan, forming each mound into a rough circle approximately the size of a fried egg.
03 - Let the feta sizzle undisturbed for 1 to 2 minutes. Watch for the edges to turn golden brown and develop a crispy texture while the center begins to soften.
04 - Carefully crack one egg directly into the center of each prepared feta nest. Work gently to maintain the structure of the cheese perimeter.
05 - Place the lid on the skillet and continue cooking for 3 to 4 minutes. The egg whites should set completely while yolks remain runny. For firmer yolks, extend cooking time by 1 to 2 additional minutes.
06 - Remove from heat and sprinkle with freshly ground black pepper and red pepper flakes. Transfer immediately to plates over toasted bread and garnish with chopped fresh herbs.

# Expert Hints:

01 -
  • The feta creates this incredible crispy salty crust that you cannot get from regular fried eggs
  • It comes together in twelve minutes but looks like something from a brunch restaurant
02 -
  • Do not stir the feta once it hits the pan or you will break up the crispy layer that forms
  • Keep the heat at medium or the feta will burn before the eggs cook through
03 -
  • Preheat your plates in the oven so the eggs stay hot while you toast the bread
  • If the feta is sticking to the pan, let it cook another thirty seconds and it will release on its own
