# How to Make It:
01 - Pour olive oil into a nonstick skillet set over medium heat. Allow the oil to shimmer and reach the proper temperature before proceeding.
02 - Distribute crumbled feta cheese evenly into two small mounds in the pan, forming each mound into a rough circle approximately the size of a fried egg.
03 - Let the feta sizzle undisturbed for 1 to 2 minutes. Watch for the edges to turn golden brown and develop a crispy texture while the center begins to soften.
04 - Carefully crack one egg directly into the center of each prepared feta nest. Work gently to maintain the structure of the cheese perimeter.
05 - Place the lid on the skillet and continue cooking for 3 to 4 minutes. The egg whites should set completely while yolks remain runny. For firmer yolks, extend cooking time by 1 to 2 additional minutes.
06 - Remove from heat and sprinkle with freshly ground black pepper and red pepper flakes. Transfer immediately to plates over toasted bread and garnish with chopped fresh herbs.
